Freezer Meal Recipes save so much time and money! We love freezer meal cooking!
One of my favorite, and probably the easiest Freezer Meal recipe I make, Ham and Scalloped Potatoes, is simple, fast and nutritious! Because this recipe is so simple, it only takes about 5 extra minutes to make 4 meals instead of 2, so I usuallyprepare 4 at a time.
Keep in mind in the recipe notes below, the ingredients we’ve listed only make one meal! If you’re stocking up on freezer meals, be sure to double, triple, or quadruple the recipe.
Ingredients
Depending on what you like better or what you have on hand, you can use russet potatoes or red potatoes for this recipe. If you’re going to use red, you may want to double the number of potatoes as red ones are typically smaller.
Also, if you don’t have any cream of chicken soup on hand, check out this DIY cream of chicken soup recipe. Comes in handy in a pinch, and it’s actually healthier!
If you’re doing this as a freezer meal, you’ll also want to have a 1-gallon freezer friendly bag for each meal you plan on making. Be sure to write a simple description on the bag too:
Freezer Instructions
The full recipe instructions are below, but it’s as simple as adding all of the ingredients (except the cheese) in order to your freezer bag. This will only take you 10 minutes or less for each meal which is AMAZING!

Be sure to get as much air as possible out of your bag, and lay it as flat as possible for easy freezing!
Cooking it in the Crockpot
Things get even easier at this point. This recipe just keeps getting better! When you’re ready to cook up one of your freezer meals, take a bag out of the freezer to defrost a little bit, and then dump all the ingredients into your crockpot.
Cook on low for 8 hours, and add your shredded cheddar cheese in the last hour of cooking. You can also stir the cheese in at the very end if you forget to add it earlier.
The Secret to Perfectly Sliced Potatoes: V-Slicer!
Shhh, here’s a little secret that will save you time and sanity. Get a v-slicer! You can use it for a lot of different things and it makes slicing potatoes so much faster. Plus, the size will be uniform, which means more even cooking!
If you are worried about the potatoes turning brown when you freeze this meal, then just freeze everything else and slice your potatoes on cooking day!Check out all the options Amazon has and read the reviews when making your choice!
Final Thoughts
This is one of my favorite freezer meals just because of how easy and quick it is to prepare. It literally takes me 10 minutes tops to put together!
I also love how you can just take it out of the freezer, empty it into the crockpot, and you’re pretty much good to go!

Equipment
1 Gallon freezer bag
Ingredients
- 2 cups broccoli chopped
- 1 ¼ pounds cooked ham cubed
- 2 10 3/4 oz cans Cream of Chicken Soup (or any Cream of Soup)
- 1 ⅓ cups water
- 6 potatoes sliced (about 1/4 inch thick)
- salt and pepper
- ½ cup cheddar cheese shredded
- 1 gallon size freezer bag
Instructions
Freezer Meal Prep
Place 2 cups broccoli in gallon sized bag
Add soup and 1-1/4 lbs cubed ham to each bag (see note)
Add 1 1/3 cups water.
Lastly, immediately after slicing, place potatoes on top
Seal bag, lay flat, and place in freezer immediately
To Cook from Freezing
Defrost just enough to get out of freezer bag and place entire contents in slow cooker and cook on low for 6-8 hours (depending on how tender you prefer your potatoes).
Recipe Notes
One reason to turn this into four freezer meals is because it's so easy to just purchase a 5 lb ham and cut it in fourths for cubing. No extra measuring or guessing!
You can add the cheese into the bags if you want to save a step, I just personally think it tastes better added at the end of cooking time.
If you don't add the potatoes at the end, and freeze right away, they may turn brown. This doesn't mean they are bad, it just is what they look like if left in the air to long. Another option is to NOT freeze the potatoes and slice them up on cooking day.
